Fourteenth-century recipe:
Pancakes with wine
100g of flour, 3 eggs, 1dl of white wine, 1dl of water, salt
“Take the flour and wet it with whole eggs. Then mix with water, add salt and wine and beat everything for quite a long time. Put some lard in a small iron pan and heat on the fire. Then put your appliance in a bowl pierced with a hole as big as your little finger, and run it into the pan, starting in the middle and turning all around. "
